My New Year Gift For You: Quiche of Swiss Chard and Walnuts in a lovely rectangular basket of flours.

So said, I share here one dish I offered for the collective New Year's Eve dinner.
To You, please.


Ingredients:

♦ 1kg Swiss Chard (weight to be cooked and dried);
♦ 100gr Amaranth flour;
♦ 100gr Rice flour;
♦ 2 Eggs;
♦ Extra Virgin Olive Oil (5 table spoons);

♦ Chia Seeds (1 table spoon);
♦ Gomashio (1 dusting);

♦ 100ml Cold Water;
♦ Minced Garlic (as much as suffices);
♦ Himalayan rose salt (3 pinches)
;
♦ Black Pepper (1 pinch);
♦ Warm Water (as much as suffices);

♦ Rice Milk;
♦ Turmeric Powder (a pinch);
♦ 5 Walnuts (to be minced);
♦ 35gr Grana Padano cheese (grated-1 dusting).

♦ Breadcrumb (a very small dusting).

*The mixed flours part is hand made, ingredients were crushed and mixed with a fork and elbow grease. 

Other useful tools (listed in bulk):
1 bowl, 1 table spoon, 1 tea spoon, 1 wooden spoon, 1 measuring jug, 1 colander, 1 frying pan, 1 cover, 1 pot, 1 table knife, 1 fork, baking paper cut at measure, some plastic wrap, 1 cooking fire, 1 oven.

Method:

Take Swiss Chard in cubes ready to cook, put it in a frying pan, add some water,  put on the cover and cook for at least 15-20 minutes at low fire. As it's done deprive it from the cooking water by a colander. Let it rest, put inside oil, rose salt, minced garlic, black pepper. Mix all together and let it bake a little, then turn off the fire. Let it cool.
...Meanwhile...
Take a small container, put inside 1 table spoon of Chia Seeds, add 3 table spoons of warm Water and let it thicken for 15 minutes at least.

In a bowl mix together the Amaranth and Rice flours, Rose Salt, 5 table spoons of Extra Virgin Olive Oil, the Chia seeds amalgamation, some cold Water and some Rice Milk. Hand mix it all again.

Take a baking pan, put inside baking paper cut at measure. Put the dough inside it creating a sort of "cover". 
Hand work by spreading it all over the baking pan homogeneously.

Put in the fridge for 30 minutes circa and let it get "solid pasta".
...Meanwhile...
Preheat the oven at 180°C for 15 minutes.
Pour in a bowl the already dressed Swiss Chard and add to it: 1 egg, Grana Padana cheese, Turmeric powder, Gomashio, Extra Virgin Olive Oil (2 fast turns), 5 minced Walnuts, Rose Salt as much as suffices and mix it all.
Take out the solid dough from the fridge.
Pour the mixture into the baking pan spreading it all around homogeneously.
Open one more egg, mix it into a little container with a fork, add a pinch of Rose Salt and a little Rice Milk. Pour the liquid egg mixture on the content into the baking pan. Add a dusting of Grana Padana cheese, Chia Seeds and a very small quantity of breadcrumb.
The oven is ready, so, bake at 180°C for 50 minutes, cooking: medium position.
When the time is elapsed turn the oven off and let cool.
This dish is very good eaten with appetizers during an important dinner, or as a main course in a light meal all year round.
As usual, it was a first experiment to me, and with great pleasure I say it was successful at our table. This is simply the luck of the 1st time. I am a self taught in this field and all that I create comes 100% from my mind and applied fantasy. Everyone can do what I decided to start doing at a mature age, without having attended any course/school which aren't my interests, just creating by myself and having the chance to put at others'disposal.
